Raspberry Popsicle


What to do with leftover raspberry sauce? Make raspberry popsicles! Just dilute the sauce with about one tablespoon of water or more, pour into popsicle molds, and freeze. 



Raspberry Popsicle 

2 pints fresh raspberries (or 2 (12-ounce) packs frozen raspberries, unsweetened & thawed)
¼ cup sugar
1 tablespoon fresh lemon juice
1 tablespoon water

1) In a medium saucepan over medium heat, stir together the raspberries, sugar and lemon juice until it comes to a simmer.
2) Simmer for 2 minutes.
3) Remove from the heat and let cool briefly.
4) In a food processor fitted with the metal blade or a blender, pulse the raspberry mixture until smooth.
5) Strain the mixture into a resealable container.
6) Refrigerate for 2 hours.
7) Add 1 tablespoon of water or more to mixture and mix well.
8) Pour into popsicle molds. 
9) Freeze.
